Cartouche used when cooking, very useful. TIP.

If you do a lot of cooking, you will have come across the term “cartouche”. It’s a French word that basically means paper lid in English.

The good thing about a cartouche is you can put one over something like gravy or custard to stop it skinning and making one just needs scissors and baking parchment / greasproof paper. A square – oblong shape is easiest but making a circular one is not difficult.

How to make a circular cartouche.

You can use this method to make circular lining paper for cake tins.

TIP.

What prompted me to write this mini article was my non-stick frying pan that has seen better days! I wondered if there was a some way to use the pan and still have the non-stick properties. I thought about using a cartouche using baking parchment but use it like a cake tin lining. I decided to use some Air Fryer paper / liner because it felt sort waxy – a bit like bread wrappers used to be!

To my surprise, this actually worked, I put the cartouche in the pan and added a bit of butter and then cracked 2 eggs in on a low heat (while my bacon was cooking in the Air Fryer). When cooked, the eggs just slid off the paper and on to the plate. So I might just hang on a while before buying a new non-stick frying pan.

Note.

  1. You might need to check if the paper is “one sided” e.g shiny on one side.
  2. You might need to use more oil / butter than you would with a good non-stick pan.
